Arroz con leche/ Rice pudding recipe

Buenos dias a tod@s, 
espero que esteis teniendo un buen verano. 
Ya que estoy pasando parte del mes de agosto en Asturias, 'mi casa'...qué mejor que aprovechar e intentar aprender a hacer el típico Arroz con leche, la receta de mi abuela, y que ahora me enseña mi madre, aunque hay mil maneras de hacerlo y seguro que vosotr@s tenéis vuestra propia receta.
He de decir que esta vez soy una mera aprendiz y mi madre es la que lleva la batuta (o la cuchara de madera es este caso :)) así que el mérito es todo suyo. 
No se le puede quitar el ojo de encima y lleva tiempo, asi que ---paciencia ;).



Ingredientes: 
470 gr de arroz
1 bote mediano de leche condensada
1/2 taza de anís dulce
cortezas de limón
canela en rama y molida
4 litros de leche
800 gr de azúcar (el doble de arroz)




Preparación: 
1) Ponemos medio litro de agua a hervir  con una pizca de sal, cuando rompa a hervir se echa el arroz hasta que se vaya evaporando el agua y siempre removiendo con una cuchara de madera hacia el mismo lado para que no se nos pegue.




En un cazo a parte vamos hirviendo la leche junto con las cortezas de limón y la canela en rama y se la vamos añadiendo al arroz (la colamos previamente) y sin dejar de remover. Este proceso de incorporar los 4 litros de leche lleva tiempo (unas dos horas más o menos hasta que todo está integrado).



2) Cuando terminamos de añadir la leche y el grano de arroz esté bastante blando ya, le añadimos el azúcar (sigue removiendo) hasta que hierva; en este tiempo aprovecharemos para añadir el anís y la leche condensada.






3) Seguimos removiendo y vamos a ver que el arroz va quedando espeso y poco a poco va tomando forma de crema. Ahora apagamos el fuego y lo dejamos unos minutos que se haga.
Pasado este tiempo lo servimos en los recipientes y decoramos al gusto, en este caso lo hemos decorado con canela mezclada con azúcar.






...y ya tenemos nuestro arroz con leche, espero que lo disfrutéis!, es un postre estupendo para disfrutar en fiestas y en familia, como a nosotros nos gusta :)

Good morning all!, 
I hope you are having a nice summer. 
Since I´m spending part of the summer at home, Asturias'mi casa', I thought I will take the advantage and try to learn how to make the typical rice pudding recipe from here. The recipe of my grandma, and now my mother is teaching me. 
There are thousand recipes and everyone makes it a bit different.
I must say that this time I´m just learning and watching and my mom is the boss, so all the credits are for her ;)
This recipe takes time and you should be watching it, so ..be patient :)




Ingredients: 
470 gr rice 
1can condensed milk 
1/2 cup of sweet anise 
lemon peel 
Cinnamon stick and ground cinnamon to decorate
4 liters of milk 
800 g sugar (double the rice)






1) In a large bowl, we put half a liter of water with a pinch of salt and let it boil; then add the rice and stir with a wooden spoon always to the same side, so the rice wont stick to the bottom.





In another bowl we cook the milk together with the cinnamon stick and the lemon peel, let it boil and add it slowly to the rice. This process of incorporating the 4 liters of milk takes about two hours until everything is well integrated.



2) When the 4 liters of milk are completely added and the rice grain is quite soft we can add the sugar (let it boil and don´t stop stirring); we take the opportunity now to add the anise and condensed milk. 





3) Continue stirring, you will see now that the rice is becoming thicker and the mix looks like a soft cream. Turn off the heat and leave it rest for a few minutes.
After this we can serve and decorate with sugar mixed with cinnamon.








...and after two hours (more or less), we have our rice puddin!!!!, it should be like a soft cream, with all the ingredients well integrated, the rice grain should not be lost. 
I hope you enjoy it, it´s a really nice dessert to enjoy in family reunions, just like we like  it!!
